Ingredients for making nut cake with baba baba:

For the nut cake:

 1 cup of wheat flour (140 grams)

 1 cup of sugar (160 grams)

 ½ cup ground walnuts

 6 eggs

 1 tablespoon of baking powder

For the girl's baba filling:

 1 can of condensed milk

 200 milliliters of coconut milk

 3 egg yolks

To the roof:

 3 egg whites

 1 can of ice cream without whey

 4 tablespoons of sugar

 1 tablespoon of unflavored powdered gelatin

 1 teaspoon of vanilla essence

 walnut halves

How to make nut cake with baba baba:

Prepare the walnut cake by separating the eggs and beating the whites in a firm snow point. Add the yolks one by one, beating between each addition, followed by the sugar in a cloud. Continue beating until creamy and shiny.

In a bowl mix the flour, walnuts and yeast. Add the cream from the previous step and mix everything well until completely incorporated.

Tip: The walnuts should be well ground to be homogeneous in the dough.

Grease and flour a round pan with a hole in the middle. Place the walnut cake dough in it and bake in a preheated oven at 180ÂșC for 30-35 minutes.

Tip: For this recipe a 24 cm diameter cake pan was used.

Then prepare the baba de Menina filling by placing the respective ingredients in a pan: condensed milk, coconut milk and egg yolks. Place on fire and keep stirring for 10 minutes or until it turns into a cream with the consistency of soft brigadeiro. Turn off the heat and set aside.

Tip: Use free-range egg yolks to get a very yellow cream. Sift egg yolks to avoid the egg smell and taste.

To make the topping, hydrate the gelatin in 4 tablespoons of cold water. Beat the egg whites with sugar for 5 minutes, until it becomes a firm, shiny meringue and, while beating, add the hydrated gelatin, vanilla and cream. Beat everything together for 2-3 minutes to get a consistent cream.

Tip: For the topping to be just right, the cream must be stored in the refrigerator at least 2 hours before preparation.

After baking the cake, remove it from the oven and let it cool before unmolding. Then unmold and cut into 2 or 4 parts to fill with the baba baba - reserve a little for the topping. Assemble the cake again and cover it with the cream from the previous step.

Tip: If you want you can moisten the cake with a syrup of half a can of condensed milk mixed with a cup of milk.

Throw the reserved girl's drool over the cake and reserve in the fridge for 30 minutes to 1 hour, for the icing to set. Serve this wonderful girl baba cake recipe with walnuts decorated with walnut halves and good appetite!
